Imagine walking into Linla on a Monday night and finding the room in a state you’ve never seen it in. 

At the bar, Lachlan Gunner and the Trap. team take over. Trap. was named South Australia’s Best Cocktail Bar in 2024, built in a basement most of Adelaide doesn’t know exists, on the idea that competition-level drinks shouldn’t feel like hard work. Lachie has fourteen years behind the stick and a national competition record to match.  

For this shift, he’s working from our Taiwanese pantry and running it through Trap’s technique.  

This is more than a guest shift. It’s an interstate crossover between two rooms that have almost nothing in common. 

Around him, the dining room clears. 

Linla is normally a Taiwanese social dining bar: communal tables, big groups, a room that runs late and loud.  

For one night the tables come out, and the whole space turns over to the bar.  

Standing, moving, everyone in one room instead of parked at their own table.  

The vision is simple: Adelaide precision, Taiwanese flavor, a Surry Hills room with the furniture pushed aside. 

Monday is the industry’s night off, and Linla is where that crowd already ends up.  

Together, trap. and Linla will put on the kind of night Sydney Bar Week is actually for: bartenders, brands and hospo mates in one room, drinking well past the point most rooms have called it.
